Tonight I'm home all alone. Hubby is working and my son is with his grandparents. What to do for dinner? I want something really quick and easy I can just bung in an oven. I will have about 587 calories left for it.

A curry vegetable stir fry - any day. It takes me about 5 minutes to cook (and an hour to clean the kitchen...) :p

This is my go to as well! But not curry. I throw a portion of ramen noodles in boiling water, can be any kind of Chinese noodle. Some frozen veggies. Then whatever protein after that cooks. Siracha it up. I'm obsessed.

^^this is my go to too. Sometimes a pork chop. My husband works 2-10 pm, so I’m pretty much on my own except weekends.
