    I usually go for the same base of mixed leaves, tomato, bell peppers, cucumber, red onion and carrot and the extras could be:

    1.plain chicken and bacon
    2.honey mustard chicken and bacon
    3.chicken with ginger,soy and chilli sauce
    4. Tuna and mayonnaise
    5. Chicken with added chickpeas, sun dried tomatoes and pesto


    I usually sprinkle with sunflower and/or pumpkin seeds.

    I love sitting outside in the sun during the warmer months with a fresh salad followed by fresh fruit

    I start out with purple cabbage and kale or other sturdy leafy green (most lettuce is too wimpy for my heavy toppings), cut like cole slaw, and dressed with a homemade olive oil vinaigrette.

    I add enough hearty toppings to make a meal of it: things like roasted vegetables, avocado, nuts/seeds, pickled beets, pan-seared tofu, boiled egg, legumes, salmon, brown or black rice, quinoa, fruit such as berries, apples, pomegranate arils. Not all of it at once of course, curated to make a balanced and delicious meal.

    Yum so many awesome ideas. I love adding dried cranberries and golden raisins in my salads, shredded raw brussel sprouts for texture and apples for crunch.
