Vegan Lentil Chili

I have been eating a mostly plant based diet, besides baked chicken breast on occasion. I have found that you can make all kinds of amazing dishes without meat. So, I want to share some of the recipes I really enjoy
JimJams Vegan Lentil Chili

1 Green Pepper
1 Poblano (2 green peppers will work if you cant find poblanos)
1 large onion
1 large tomato chopped
4 cloves of garlic
2 cups of dry lentils
2 quarts vegetable broth
1 tablespoon canola oil
1 can of Rotel Chili Fixin's
28oz crushed tomatoes
1 bag of fake meat crumbles
1 can of black beans (drained, rinsed)
1 can of kidney chili beans
1 bag of frozen corn
1 teaspoon of cumin
1 tablespoon of chili powder(or to taste)
Bring lentils and vegetable broth to a boil in a large pot over high heat. Reduce heat to medium, and simmer for 10-15 minutes Meanwhile, heat the canola oil in a large skillet over medium-high heat. Stir in the garlic, onion and peppers; cook and stir until the onions are translucent.
Stir in cumin and chili powder; cook 5 minutes more.
Add the veggie mixture, tomatoes, corn, beans and fake meat crumbles into the simmering lentils. Continue simmering until the lentils are tender, 20 to 30 minutes. Season to taste with salt. Garnish each serving however you like.
