Cambodian beef lok lak is sometimes served with rice, but I don't miss it if I just have the salad topped with stir fried beef. The first recipe is similar to the one I use, but the more complicated second recipe gives a better idea of how to serve and present.

Nam prik ong is a Thai dinner of warm minced pork and tomato dip for raw and blanched veg. Another dish where I don't miss the rice it is sometimes served with. You can reduce fat by using minced chicken, turkey or beef. I normally add a squeeze of lime to the first recipe. First recipe+lime is similar to the one I use, though second has better presentation photos.
