Where are the gluten-free peeps at?

So even though I've been tested for celiac disease, and it was negative, my doctor suggested I try gluten-free for a while anyway. He says a lot of people feel much better when they go gluten-free, even if they don't have celiac.
So, my gluten-free friends, what do y'all eat?
Do you prefer to avoid all gluten products and replace them with completely different foods, or do you prefer gluten-free bread, gluten-free pasta, etc?
What other foods do you totally avoid?
I don't know if it's worth getting the gluten-free bread and pasta, or just not eating any bread or pasta whatsoever. I don't eat much bread now anyway, but I like my multigrain pasta once in a while.

Gluten free bread is nasty...I haven't found any I enjoy. Well I take that back, the gluten free bread rolls and French style bread is bomb! I can't remember the brand though.
But sandwich bread is gross.
Gluten Free pastas: I can't really tell a difference, although I don't even eat that often whatsoever.
Feel free to add me or just check out my diary, I eat the same thing pretty much everyday, but no gluten will be found in it.0 -

I am not celiacs but eating gluten-free does alleviate a lot of my joint pain and other issues as well. It was amazing the difference in overall well-being when I went gluten-free.
I was gluten-free for 4.5 months (I ate gluten 4 times during that time.) I chose to NOT replace breads & cereals as I'm too cheap and it wasn't important to me. I went for "normal" gluten-free products. I did try gluten-free pasta one day and enjoyed it but not the 3-times the price of a good whole grain pasta!
I chose to eat more veggies, fruit, legumes and meat and to have things like rice krispies or rice chex instead of wheat cereals and corn tortillas instead of flour tortillas or bread. Also, since I'm not celiacs I ate a lot of oatmeal (not worrying about having it labeled "gluten-free" or having gluten contamination issues.
Of those 4 times I had gluten, 2 of them was soy sauce related. I realize that with the oatmeal I was having contamination issues but I cut out everything that had a gluten product in the ingredients list.0 -
I have cd and have been gf for 7 years. I mostly just eat naturally gf foods, but I will eat gf pasta or bread once in awhile. I eat a lot of veggies, potatoes/sweet potatoes, fruits, rice, nuts/nut butters, and beans.0

I'm gluten intolerant. Make sure you do plenty of research. While gluten free foods are good in one aspect, they are processed more and often contain more salts and other additives. Gluten free bread absolutely stinks. But many gluten free snacks are delicious. Here's where you can get caught, though: gluten free does not mean lower calories. In some cases, its the opposite. I've minimized my gluten intake, and have reduced the amount of processed food in my diet in general. I've also increased my daily servings for fruits and vegetables. When I do eat "non-gluten free" foods, I do it in moderation, and have been doing well (few and minor episodes/symptoms) for the last few years. Hope it helps.0 -
I eat GF due to CD as well. I don't do bread often as it tastes funky unless you toast it. However, if I am craving a grill cheese or something I prefer Udi's. In terms of pasta I don't see a big difference, but be sure not to over cook it as it gets really bloated and strange.
Pamela's Baking Mix I think is Best for pancakes, Kisten's for biscuits and Tom Sawyer with xanthum gum for baking.

I mostly just eat other things, like brown rice, potatoes, etc. Carbs don't scare me so I'll eat pretty much anything that doesn't have gluten in it. I try to go for more fiber when I can.) I don't eat gf bread or most of the expensive processed gf products. I am lucky enough to shop at a place that has gf flours and pasta in bulk bins for nearly the same price as regular. I DO eat gf pasta, because I'm a pasta freak and most of the gf pastas are just as good as regular pasta. Try a few. If you get a bad, mushy one, don't let it turn you off. Just keep trying until you find one you like. Some of the brown rice and corn blends taste just like regular pasta to me. I use white corn tortillas instead of bread if I want a sandwich.0
