To my vegetarians and vegans!

Options
I would love to find some new healthy recipes to include in my diet! I’ve been a vegetarian many years and I always end up getting stuck in a rut of making the same 7-8 meals over and over again. I eat no meat and no dairy. I occasionally eat fresh local eggs from sources that have happy healthy hens 😊. Any recommendations or recipes would be great!

    Check out SweetPotatoSoul, RachelAma, CaitlinShoemaker, and Avantegardevegan on YouTube and instagram. Great recipes. I just recently transitioned to a plant based diet and they have been very helpful.

    If you friend me, my diary is open. I'm happy to share any recipe you see that sounds interesting to you. Most are from cookbooks, so I'd need to type them out for you. A few are links.

    I used to buy the Vegetarian Times magazine and still search their website for recipes, though the searchability isn't so hot. (You can look for "breakfasts" or "Chinese food" or "tofu". You can't look for "Chinese breakfasts containing tofu". And if you type in a keyword, the site can't seem to differentiate between "rice" as an ingredient and "rice" as an accompaniment to the dish.) Even so, they've got a TON of recipes.

    I love bright, fresh bean salads. Here are my 3 current favorites:

    COWBOY CAVIAR

    1.5 cups cooked black beans (or use 1 can, drained & rinsed)
    1 can white corn, drained
    2 avocados, diced
    2 roma tomatoes, diced
    1 bunch green onions, tops only, sliced

    In a separate bowl, whisk together:
    ¼ cup roasted garlic avocado oil (The Olive Cart sells it, otherwise use EVOO)
    ¼ cup red wine vinegar
    1 tsp salt
    1 tsp pepper
    1 tsp garlic powder

    Combine & refrigerate to marinate at least 1 hour.


    THREE BEAN SALAD

    1.5 cups cooked kidney beans (or use 1 can, drained & rinsed)
    1.5 cups cooked chickpeas (or use 1 can, drained & rinsed)
    2 cups cooked green beans (or use 1 can, drained)
    1/2 white onion, finely diced
    1/2 green bell pepper, finely diced

    In a separate bowl, whisk together:
    2 T olive oil
    2 T apple cider vinegar
    parsley, salt & pepper to taste

    Combine & refrigerate to marinate at least 1 hour.

    When I make it I sub celery for the cucumbers for the added crunch and extra potassium. This makes a heart-healthy, delicious meal.

    Hey! Welcome to the site. I’ve been vegetarian for years, and have recently transitioned to mostly vegan. Some of the websites I use are minimalist baker, and it doesn’t taste like chicken. Vegan hugs, and veggies don’t bite as well.

    eggs - tamagoyaki - japanese rolled omelets - are quite nice. This one has both the vegetarian and non-vegetarian version and helpful tips on how to make (https://www.justonecookbook.com/tamagoyaki-japanese-rolled-omelette/ )

    taco soup - super easy. 1 15-16 oz can, each, of pinto beans, black beans, kidney beans, garbanzo beans, and white beans. 1 small can tomato soup. 1 -2 cans corn. 2 cans chopped tomatoes. 1-2 packets of vegetarian taco seasoning. Pour all the ingredients into a pan, liquid and all, mix together, heat until fragrant, and you're done, bam. It tends to taste better the next day once flavors have blended even more. Also, some folks caramelize onions first and add to the pot, or saute garlic and do the same, but as that takes 20-30 minutes for onions, without onions is faster. :-) This makes a nice huge pot that's good for a big family, or good for leftovers for a long time for one.

    Whole Foods has a really good vegan "TTLA" sandwich. So easy to make. Tempeh strips, avocado, vegan mayo, lettuce, tomato, bread. The tempeh to get is the smoky maple bacon strips by Turtle Island.

    Loads of food items to try like Okra, pumpkin, pointed gourd and family, chickpeas, beans, etc

    If been vegetarian for major share of my life, and there are quite a few combinations to explore

    That looks soo good! I’ve made versions of this before with my own smoky tempeh recipe! I wish I had a whole food store near me so I could try this out 😭

    Sure. I have a couple of Indian cook books and use them for some of my vegetarian ideas, but ones you use and stand by would be great.

    Ones I can make include: okra, eggplant, aloo gobi, daal, and a vegan curry sauce that I put all kinds of veggies and tofu into. I'm especially interested in pumpkin!
