Whatever is in the pantry

Tonight I put together a meal designed specifically to both use up some ingredients that are getting old, and custom fit the macros I had left for the day. When I put it together in my mind, it sounded really bland, but it turned out better than I expected and I can see myself making it again with only a few changes. What is your favorite "clear the pantry/fridge" recipe that turned out better than expected?


Here is what I made tonight:

Barley - Pearled, cooked, 2.25 cup
Bob's Red Mill - Organic Whole Grain Quinoa, 0.3 cup dry
Better Than Bullion - Vegetable Base, 1 tsp

Makes 4 servings of
144 Calories 3g Protein 1g Fat 31g Carbs 4g Fiber

Then I lightly toasted some carrots, garlic, and a small radish in some olive oil.
48 Calories 1g Protein 2g Fat 5g Carbs 2g Fiber

I combined a serving of the grains with the veggies, and seasoned with a generous dash of Potassium salt.
