    I have scrambled eggs and bacon for dinner almost every night.

    Breakfast go to is scrambled eggs with veggies added in (mushrooms and/or asparagus, for example, and sometimes a small amount of diced ham with a side of cherry tomatoes and a fruit (honeydew melon, berries, etc).

    Dinners are easy stir fries loaded with a ton of veggies and diced chicken breast over riced cauliflower.

    Vegetable or a chicken and roasted veggie soup.

    Roasted veggies are so flavorful even on their own - butternut squash, spaghetti squash, zucchini, carrots.

    I also like to make a diced sweet potato and apple hash cooked in a skillet together.
