I challenge you all to go plant based every weekend in May.
Post and share your food and how you feel.
My favorites are:
Overnight oats made with oats, almond milk, maple, coconut shreds, raisins and topped with fresh fruit in the morning
Fruit smoothie made with bananas, peanut butter, apple, strawberries and almond milk I add plant based protein powder too
Rice with chickpeas, bell peppers, broccoli and onion I also add hummus
Sweet potatoes with black beans, corn and salsa
Spinach salad with walnuts, strawberries, avocado and cilantro

Great challenge! I switched to WFPB 1/1/2019 and have not missed meat at all! I've become so creative in the kitchen so anyone who is considering I would recommend if not the weekend at least 1 day a week1
