Vegetarian grab and go breakfast and lunch ideas

I leave for work about 6am, can’t face eating that early so have to take food with me, anyone got any ideas for grab and go vegetarian breakfast and lunch ideas that are low in calories but filling, sick of fruit/yogurt/granola and sandwiches 😂

Egg "muffins" are good. You can bake a dozen or so and then put them in baggies or tupper ware in 2's. Good cold or warmed up and easily tailored to your own tastes.0

Breakfast
- I love overnight oats with chopped apples, cinnamon, and a little bit of flax seed, nut butter or nuts. There are an infinite number of variations of overnight oats.
- Savory Breakfast Bake and Breakfast Tamale Pie are on my list of items to try.
- Pancakes like these are fun, and freeze well. Nut butter and fruit turn them into a breakfast sandwich.
I like making big dishes that I can then eat lunch from them for several days. Some favorites:- Baked Penne Florentine
- Spinach Dal
- Mexican Pinto Bean Flautas With Cucumber Nectarine Salad (works well with mango and romaine instead of nectarine and kale; meyer lemon is optional)
- Rip's Roasted Salad
