my easy & healthy Banana Bread

3/4c splenda
1/2c no-sugar added apple sauce
2 eggs
2 - 3 mashed ripe bananas
1 3/4c whole wheat flour
1/2tsp baking soda
1/2tsp salt
optional: sprinkle of cinnamon and/or nutmeg

1) Mix flour, baking soda & salt in a bowl (add the optional spices here as well)
2) Mix splenda, apple sauce, egg & vanilla in another bowl until frothy
3) add banana to above bowl
4) fold in flour mixture

Bake 325 degrees for 1 hour in a loaf pan (spray pan with Pam)
cool for 10 min
remove from pan and cool on rack

Here's the nutritional info
I used 2.5 bananas & sliced into 10 pieces:
108 calories
26 carbs
1g fat
4g protein
5g sugar
3g fiber

Notes:
*The 5g of sugar all come from the bananas! (except for the vanilla that adds 1g of sugar to the entire recipe!)
* Baking with apple sauce produces a spongey textured cake
* Yummy to put under the broiler to toast the top and spray with "I can't believe it's not butter" or whatever spread you like
* You can add your favorite vanilla protein powder to the recipe; just use a bit less flour
* Add nuts or ground flax for added fiber

    I'm baking a tweaked version of this right now: http://lowfatcooking.about.com/od/bakedgoods/r/Bananaoatmealbread.htm [Specifically, yogurt instead of buttermilk.... and regular flour].

    Smells gooood... let's hope it tastes good too! I'm very interested to see how the bread is with oats.

    With my ingredients, splitting the loaf 12 servings will be 165 cals.

    Sorry!!! I can't edit my post for some reason..... 1 tsp vanilla! I've also baked it w/out the vanilla and it comes out fine. Also have used only 1 ripe banana and it's fine.

    I also experimented with another batch today... added some cocoa powder, a little extra splenda and threw in a handful of chocolate chips! Banana Chocolate Chocolate Chip Bread! I didn't measure; just eye-balled stuff. But, the point is, you can play around and add whatever you want to fit your taste and nutritional needs! You can make most recipes "healthier" by substituting apple sauce for oil and some/all of the sugar with splenda. And yes, I know there are some that don't use artificial sweeteners! To each his own! ;)

    Just for a laugh I wanted to post my sister-in-law's father's recipe for banana bread...cant get any easier than this...

    1 banana
    1 hot dog bun

    Place banana in hot dog bun and enjoy!

    He eats this fairly regularly. LOL!

    I should really get into using whole wheat flour and apple sauce in recipes, but i rarely use the flour i have unless its to make a sauce
