What does the green shield icon mean?
It shows up in the diary when looking up a food to add.

    It’s a check mark.

It means the entry has been verified to be correct.

(But I don’t know who or how it was verified)

This is a good point, and MFP 's explanation is weaselly in that it does not clearly state whether it's based on the number of users who have said the information is correct (there's a button for that when you look at the nutrition information for a database entry on the website) or whether someone who works for MFP has actually compared the information to a nutrition label on a processed product, or to a source like the USDA nutrient database for a whole food.
What does the check mark mean?
When MyFitnessPal believes a food listing in its database has complete nutrition information it is marked with a [check -- sorry, the check marks disappeared when I copied and pasted].

We do our best to ensure the nutrition information for foods accurately reflects nutrition information from the product packaging. Many of the foods in our database are created by users, and occasionally food will be marked with a [check] that has nutrition information inaccuracies. We are always working to improve the accuracy of nutrition information for foods, and new [checked] foods are being added all the time.

Just because food is not a [checked] food does not mean it has inaccurate nutrition information.
