Turkey Cannelloni

Here is a great recipe I have used several times before. My mom used to make it all the time for me as a kid but I have modified it to make it lower in calories and fat. Here it is:
Ingredients:
1 kg ground turkey (I used packs from costco that were 500g each)
1 1/2 containers low fat cottage cheese (750 g)
40 oven ready cannelloni noodles
l bag of spinach
1 container of mushrooms (225 g)
2 jars of low sodium tomato or tomato sauce
Any herbs or spices you wish to add
Method:
1) Cook ground turkey in a saute pan then add to a mixing bowl.
2) Boil or steam spinach, drain, and add to mixing bowl with turkey.
3) Dice mushrooms and add to the turkey mixture.
4) Add cottage cheese and any spices to the bowl and mix toroughly.
5) Grad a large casserole dish or deep baking pan, and also a smaller brownie pan and spray them with cooking spray.
6) Open 1 can of sauce and just cover the bottom of both dishes.
7) Fill the 40 noodles with the mixture by pressing them down into the mixture and twisting. Lay them side-by-side touching one another when they are stuffed. The large pan should fit 24 noodles and the small pan should fit 16.
8) Cover the noodles in both pans with the remaining sauce and spread evenly.
Cover both pans with aluminum foil and bake in the oven at 350F for 45 minutes (during the last 10 minutes you should remove the aluminum foil.
9) Let rest.
