I’m no expert but I think if you weigh yourself at the same time and other the same conditions, you’ll be able to make comparisons. Things will transition once the month is over, but for the time being, this may help.3

From a weight tracking standpoint, it doesn't matter as long as you weigh with the same constants (time of day, clothing, location of scale, etc.). If you have religious traditions that need to be adhered to, follow those so you can stay in compliance.4

The same time you always do, which I will assume is morning after using the washroom (for most people).
If you've already eaten by then (which means that your weight is artificially high), you could skip a day (if this happens only occasionally) or switch to weighing yourself later.
If you were to weigh just before sundown, you run the risk that your weight will be artificially low.
In the big scheme of things it is only a month.
You may just have to accept that during this one month your data may not fully match previous and subsequent months.5 -
Weigh yourself under the same conditions you do the rest of the year.
Yes, you may have more food in transit, or extra water weight, but this is building habits for life, and you will always be doing Ramadan, so it is good to know how the weight fluctuates due to meal timing.
Having good data will help you move forward with confidence.

Don't worry about weighing yourself, control how much you eat at iftar and suhoor. Stay active, try and get enough sleep2
