Purslane. How do you eat yours?

It's purslane season here now (hurrah!) and I bought 3 bunches today. I usually mix it with cacık (natural yoghurt, garlic, dried mint & lemon juice) but as I'm lucky enough to have got so much, and it needs eating within the next 3/4 days, I was wondering if anyone has any different ideas?
