How to work with 99% Ground Turkey

How does one work with 99% ground turkey from sticking to your hands and everything else. I tried dipping my hands in cold water, but still the meat was sticking to everything it touches.

    I've used waxed paper to form turkey burgers before but i usually have 85% or 93% I've never tried 99%.
