I'm mildly freaking out, I know that weight fluctuates but I weighed the highest I've been in months today. I weighed 129 and I was tracking/averaging 126 last month into the beginning of this month, I know I had 3 days way over my goals but for the last 2 weeks I've been around 1200-1700(averaging 1500) which is what I was eating earlier this month and not gaining. My measurements are a little bigger too actually so I think it's a little more than just fluctuations, My trend weight is up too
Only things I've changed is eating later in the day and maybe a little bit higher in carbs/sugar which I know can cause bloating for me but it's still nothing extremely out of the ordinary. I'm still weighing most things I eat, portions are more or less the same. My period has already started and been over for a few days so I don't think it's that...I really don't want to go onto a deficit again but if I keep going I might have to

Ok, first of all, take a breath. Your post gives multiple reasons you might have 1 day where your weight is slightly up...
1) you had a couple of higher carb days which you even said yourself can cause bloating and water retention...
2) you also said you weight *most* things you eat but not all. Have you given yourself a check in and done a day or two of consistent weighing? Maybe your eyeballs are lying to you and your portion size has creeped slightly.
TBH I just had a 5 day period of time where I ate at a minimum 1000 calories over my maintenance every single day. (a few days even double my maintenance) and 2 days later (today) my weight is back down into my range...
Let's look at other options:
have you added new exercise recently?
have you change the intensity of old exercise?
are you ovulating (I also hold water at ovulation sometimes)?
did you have a very salty meal recently?
did you walk under a ladder and cross paths with a black cat? (jk)
honestly there are SOOOO many reasons as a woman that you can retain water and only half of them make any kind of sense. I retained water once because I reduced my sodium... which is the opposite of what you would expect.
I'm just saying take a breath. Take a couple of days and see what happens with your weight. And it might not be a bad thing to check in on your portion sizes and actually weigh for a couple of days to ensure you're not eating more than you think you are.7 -

This! It could just be food sitting in your intestines, honestly. This happens to me and if I go back into a “deficit” for like three says, it’s gone. That means it wasn’t fat gain. It was water retention or close to menstration or literally just food waste.1
