Homemade whey

So guys recently I made some home made whey powder I've put 4.5 litres of wholemilk left it to reach 82°C after took it off from the cooker added 9tbs of lemon juice left it for 20 took the ricotta off and what was left is the whey from what I know after I dehydrate it and was left with the powder.Now my question is do you guy's know by any chance if the fat and carbohydrates from the wholemilk is still in the powder or not?Thank you

Compare the nutrition from 4.5 litres of whole milk and 9 tbs lemon juice to the nutrition of the weight of ricotta you have.

Thanks for your reply... I need to go for the egg white powder then,the milk one has way to many carbs and fat0
