Wackiest Meal?

So I just cooked dinner from “what needs to get used up” and “how can I hit fiber, protein, and healthy fat goals”.
I ended up with fried tempeh with baba ganoush and a side of avocado.
Anyone else end up with some weird combos in search of meeting all the goals?

The other day for lunch I had random 1/4 cup servings of fresh pineapple and blueberries (finishing up what was in the fridge), a Jamaican beef patty, and 1/2 packet of premade Southwestern style salad. That felt pretty weird, especially when I followed up with a single large marshmallow as "dessert".1

That meal doesn’t sound weird to me at all. It sounds delicious.
I’m more likely to make something “weird” because I need to use up whatever is going bad. Last week, one dinner was toast topped with homemade banh mi pickles and Trader Joe’s tzatziki. Another was a huge plate of roasted green beans and sugar snap peas drizzled with the same tzatziki. Since that’s very little protein, dessert was Greek yogurt with protein powder mixed in.3 -
We are having an "eat the leftovers" day here. My lunch was turmeric roasted potatoes, butternut squash and spinach all coated with nutritional yeast.
That might not sound very weird actually. 😁2
