Wackiest Meal?

So I just cooked dinner from “what needs to get used up” and “how can I hit fiber, protein, and healthy fat goals”.
I ended up with fried tempeh with baba ganoush and a side of avocado.
Anyone else end up with some weird combos in search of meeting all the goals?

    The other day for lunch I had random 1/4 cup servings of fresh pineapple and blueberries (finishing up what was in the fridge), a Jamaican beef patty, and 1/2 packet of premade Southwestern style salad. That felt pretty weird, especially when I followed up with a single large marshmallow as "dessert".

    That meal doesn’t sound weird to me at all. It sounds delicious.

    I’m more likely to make something “weird” because I need to use up whatever is going bad. Last week, one dinner was toast topped with homemade banh mi pickles and Trader Joe’s tzatziki. Another was a huge plate of roasted green beans and sugar snap peas drizzled with the same tzatziki. Since that’s very little protein, dessert was Greek yogurt with protein powder mixed in.

    We are having an "eat the leftovers" day here. My lunch was turmeric roasted potatoes, butternut squash and spinach all coated with nutritional yeast.

    That might not sound very weird actually. 😁
