I ❤️ bread, but in my attempt to eat breakfast foods that provide longer sustenance, I started to pull together an oatmeal recipe that satisfies my cravings for banana bread!
1/2 C G/F Oats (I like Bob’s Red Mill)
1 medium banana, sliced
5 walnuts, crushed
2 tsp honey
2 tsp chia seeds
Mix the dried oats and chia seeds in a small pot. I like to cook my oatmeal on the stove top with water...you can use milk or a milk alternative. Add water or milk according to how thick/thin you prefer your oatmeal.
Once my oatmeal is soft and not too thick, I pour it in a bowl, top with sliced banana and honey.
Super simple, easy and filling!
I’m always looking to bring my favorite flavors together in ways that are healthier than what I would usually reach for. If you have any great vegetarian breakfast recipes, I’d love to read about them!
