Here are some dinners where I don't miss having a starchy element.
Nam prik ong is essentially a spicy tomato and pork dip for raw veg. This recipe is particularly easy because it uses a commercial thai red curry paste instead of making it from scratch. Skip the optional rice. There are more NE Thai dinners that are essentially warm protein dips for raw veg. Google "ong" and "lon" for other dishes along this line.

Some western meals that are essentially dips for raw veggies.
The bagna cauda recipe is given as a starter but the traditional peasant meal would also be served with bread and eggs would scrambled in the last of the sauce at the end of the meal.

Skip the potatoes in a grande alioli.

Another strategy is to eat any asian meal normally served with rice with "cauliflower rice", This is cauliflower blitzed in the food processor to a rice like texture. I like it raw but you could warm it in the microwave.
Another replacement for any meal served with noodles is to replaced by spiraliized courgette or squash, or use the indigestable zero calorie shirataki noodles. Shirataki noodles work better with asian noodle recipes than Italian pasta recipes.
Finally if you want a starchy element that is lower in carbs than grains, go for cooked pulses such as lentils navy beans.0
