Chicken strips

Today I'm finally feeling like my back isn't going to snap in half, so I'm making crispy chicken tenders in the oven. They're dipped in a batter of egg, dijon mustard, lite mayo, and flour, then rolled in toasted panko breadcrumbs and finished in the oven.

I have nothing else to say other than 🤤 (that's a drooling emoji for all of you who can't see it)

    YUMMM that sounds tasty right now!
    I just made baked asparagus "fries" over the weekend because we did u-pick asparagus and got 9lbs of it. Dipped in flour, then egg, then a combo of panko, parmesan, and spices. Baked for 13 minutes on a wire rack. SO GOOD.
