New favorite post-workout breakfast

Finishing up an hour long Fitness Blender workout this morning and they reminded us that we just killed our carbs so we should make sure to eat a good meal if possible after the workout. I was reminded that I have this recipe, which seems like a lot of prep but I usually heave leftover rice in the fridge, I can make extra of the scallion vinaigrette ahead of time, and buy the carrots pre-grated. Sometimes I add a cabbage and broccoli slaw to it as well.
