Yummy, easy to make, high protein, low cal.Quinoa
1 avocado
1 tomato
1 can black beans
1 can pinto beans
2 cloves garlic
Cilantro
Pepper flakes
Limes or lime juice
2 shallots
Chili seasoning
Olive oil
Make about 2 cups of quinoa (cooked). Set aside
Cut up tomatoes, cilantro, garlic, shallots- set aside
Slice avocado and set aside
Sauté shallots and half the garlic in olive oil for a few minutes. Add beans, chili seasoning (a sprinkle), red pepper flakes and sautée for 6-7 minutes til hot
Dressing: In a small bowl, mix 3TB lime juice, 2 TB olive oil, half the garlic and cilantro, salt and set aside
In a casserole dish, mix the quinoa and bean mixture.
Top with fresh tomatoes, sliced avocado, and more cilantro (if you like). Drizzle the dressing and enjoy!
