Strawberry Cheesecake Popsicles -- DeeLish!
Found this the other day when I was wandering around on Google. They're really good!
You need Popsicle molds to make them, but I bet pouring them into ice cube trays would also work...
Ingredients-
16oz chopped fresh strawberries
1 cup water
1/4 t sea salt
1/2 t vanilla
1/4 t cinnamon
2 large extra ripe bananas
1 8oz package cream cheese (room temp, very soft) - I used fat free
Directions:
In a sauce pan over medium heat, combine strawberries, water, salt, vanilla and cinnamon. Cook for 20 minutes then mash mixture with a potato masher (carefully!I It flies out of the pan if you go nuts). Let cook for another 15-20 minutes then cool. Once cool, combine in a blender with cream cheese and bananas and blend until fully combined. Pour into 6 Popsicle molds and chill for 4-5 hours.

I forgot to add- you can use cherries (pitted) or blueberries too. Just may affect the cooking time, some fruits might cook down faster than others0

I made these last night. I entered the recipe in the recipe builder on this site with the ingredients I used. The only different item I had was the cream cheese. I only had the neufchatel cream cheese on hand, not fat free.
The nutrional info was:
Calories 148
Carbs 14
Fat 8
Protein 3
Sodium 245
Sugar 8
It made 6 and I tried one, it was pretty good. I'd rather have that than store-bought.0 -
