I put in a receipie and called for 1/4 tsp garlic powder and it said it was 331 calories and 73 carbs.
What's up with that.

A lot of the calorie counts in the data base are incorrect. User based input. Check the USDA for more accurate values.

I was curious so I scanned in the barcode on the garlic powder that I use. It's a generic brand. It came up as 28 calories per teaspoon.

I find that a lot of time when I input a recipe. Definitely flag incorrect values when you see them!

For logging? Just change the number 1 next to servings to some other number.
If you mean you want to tell MFP that the meal serves more than one person, like you do with a recipe, you can't do that with a meal. But if you originally included all the food to serve four people, for example, and you want to log one fourth of that, just change the number of servings when you log to 0.25,
