When I look at my breakdown of foods eaten on a day - it shows that my goal for saturated fat is 18g - however it shows that my goal for Polyunsaturated fats and Monounsaturated fats is "-" if I have eated 5g of polyunsaturated fats it shows a red -5g - surely this is the wrong way round - I would have thought that the saturated fats was the red flag?

MFP doesn't alienate any particular nutrient. It being red vs green or plus vs minus is only relative to the goal, not to the "goodness" or "badness" of the food/nutrient.2

MFP is not set up with a RDV for poly- and mono-unsaturated fats. The "goal" for saturated is a recommended max.
Personally I ignored them all and choose to focus on keeping total fat in line and ate "good" fats where I could. Not about to get bent out of shape when a nice steak sends me over on saturated fat, though3 -
Yes, the poly and mono numbers are something of a known bug that has not been fixed -- there's no goal so it should be NA, not 0.
But the more important point which was made above is that red just means you are over the goal. It doesn't mean it's bad -- for some things, like fiber or protein or Vit C or whatever it might be good. In other cases (like overall fat or carbs, IMO), it's neutral.2 -

The target for saturated fat is a max as recommended by various health organizations. Mono and Poly fats are healthy fats, but there is not currently a recommended amount by any health organization...it should be N/A, but it is listed as "0"1
