Made a recipe too filling/too low cal

I made green peppers stuffed with a mixture of sweet potato, black bean, quinoa, and sauteed vegetables(yellow squash, onion, garlic, serrano pepper). I was full with half of a portion, which brings my calorie total down by 200 or so.

How do you avoid making a recipe that has too few calories for the amount of food you are capable of eating?

    Add a delicious high-calorie topping or condiment, like sour cream, avocado, or cheese. You could also supplement with a side dish that’s easy to whip up quickly (buttered toast, microwaved sweet potato, 2 oz of pasta, a cup of rice, salad with 2 tbsp of full-fat dressing, etc).

    Also, don’t forget to count cooking oils in your calorie total.

    Adding fats or carbs is pretty easy if you're worried about not making the mark and want to hit it healthily. As you might guess, fats are healthier to add so you could go for that first.

    Personally if I am eager to make my mark for the day, I'll wait a while and have a treat (healthy or unhealthy, I guess it depends). Another thing you can do if you're NOT strict about sugar/"junk" is treat yourself with a flavored beverage. Soda is anywhere between 80 and 200 ish for 12 oz.

    But also trust your gut! You don't always have to make the mark every day (unless you reeeally have to).

    Finally, haha, make sure you're logging or at least tracking throughout the day, or meal plan ahead of time. It's good to keep calories in your thoughts when it comes to meals, IF you're tracking them. You will get into a vibe of how much, by sight, makes you full and you'll be able to substitute ingredients or cut them down as you practice.
