Everyday I walk between 20,000-25,000 steps at between 8-9.5 miles.
Today I walked the same amount, but suddenly my Fitbit thinks I've walked 16.26 miles, obviously this is wrong, how do I fix it?

Check the stride length. It's possible it was changed during an update or glitch, but you can set it yourself.

yes, adjust/check the stride length & arm dominance setting....had this previous model. Not to my liking accuracy wise...especially the "climbing"/elevation/stairs climbed function (completely useless)0

There was a time they had an issue where the weight used in calcs could be proved to be KG, but it was displayed and by all appearances looked correct with lbs.
That was a huge issue in calculations. You had to change setting to KG, and then back to lbs and enter correct weight again.
Perhaps something just as flakey happened with the stride length setting - which doesn't display anything in default mode.0
