Breakfast bowls

Does anyone meal prep breakfast burritos or bowls. I want to make breakfast bowls with eggs, peppers, onions, garlic, spinach, mushrooms and hashbrowns and freeze them. I was wondering if it is ok to refreeze cooked frozen hashbrowns and will eggs reheat okay. Thanks

    i do frozen hashbrowns, diced rainbow peppers , turkey sausage crumbles and shredded cheese and freeze and just add egg when i cook in microwave not sure about frozen egg either.

    It's fine to refreeze hashbrowns after cooking, and eggs will cook more when you reheat** so will maybe change texture, but will be OK to eat. (** For example, if you cook the yolks runny, they might get solid during reheating, scrambled eggs might get a little drier, etc.)

    I've seen lots of recipes for egg breakfasts cooked in muffin tins where people mentioned that the leftovers freeze well.

    I work from home now, but if I still worked in an office and meal-prepped on weekends, I would definitely throw those in the rotation.

    Man, just eyeballing that recipe, there’s no way it can be 224 calories? I find the calories to be off on a lot of allrecipes. I always hand enter them myself on MFP.
