August 15, 2013 marks what would have been Julia Child's 101st birthday. (I'm a day late... oops...) She's one of my most respected chefs and boeuf bourguignon hero.

To celebrate the life of one of America's true culinary darlings, here are some of Child's best quotes. Assembled by Huffington Post.

1. "The only time to eat diet food is while you're waiting for the steak to cook."

    I'm usually distracted when he's shirtless so I never noticed the eye mole...until now...

    I really believe that people who don't cook, grill, or barbecue understand how true this is.
