Personal experience:
I just solidified plans to repeat my Enchantments hike, and summit Little Annapurna this time. Having the data from the last trip gives me a good idea how long it'll take, useful for planning. It also gives me an elevation chart to pace myself against, and a "course" in Garmin terminology - if I get lost in the dark, my watch can tell me which way to go.
But it goes way beyond that. I was intimidated last time, I know I can do this now, but I still need to take it seriously. Luckily I have good data on all the exercise I did leading up to it and exactly how much I tapered, helping me decide when to start easing up this coming week. I also have a bunch of sleep data which I usually ignore, but can help put my performance into perspective.
This isn't only for repeating a specific trail; when I'm doing a new one I can use the search feature to look at hikes (or rides or ...) I've done with similar mileage etc.

Which Garmin do you have? Mine isn't nearly that sophisticated (FR 35).1

Have you tried the Garmin Explore app (and website)? It works with your Fenix and includes all sorts of maps.
