So I do a fair few gym classes, boxing, core, rpm, circuit and yoga. I tried aerial yoga for the first time the other day and it felt too easy like it wasn’t working my body. Is there any benefit in regards to fitness or is it more about stretching without resistance?

It depends on the class. It is easier in some ways and more difficult in others. having myalgia, i found it easier on my body than regular yoga. i find it easier to stretch. it has sneaky body weight work in it. it keeps your core engaged like an exercise ball. i also think it's more fun.
a quick google search also found:
decompression of spine
increases pulling strength
increases flexibility
psychologically and mentally challenging, -creativity, emotional release, etc
full body workout
improves balance
