Why are potatoes so good?

I just ate a cold, leftover potato and whatever feral part of my brain that is responsible for liking food is saying that it's the best thing ever.

Ahh-hh. Potatoes. Love every part of them - even (and mostly) the skins!!! When I get asked about foods in that "what if you were stuck on a desert island" question - I don't miss a beat. Don't bat an eye. Don't even mull it over. My two foods: coffee and potatoes. I'd die a happy person on that desert island...1
