Dried beans are cheap and a great source of protein. If you can afford a pressure cooker they are real easy and quick to prepare. If you don't have one they require a bit more planning but still possible. Red cabbage is the cheapest source of anti-oxidants. There are some really flavorful slaw recipes that don't require high calorie mayonnaise. Here is one with mostly cabbage and carrots. Super healthy and cheap. Buy your spices in bulk, as well as oatmeal, flour and the dried beans. Lots of good stews and soups with beans and lentils. Red lentils get soft, brown/green ones keep their texture.
