Late night sugar cravings

I'm at my wits end trying to get my sugar cravings to stop. I've made a lot of progress by eating tic tacs when I crave to give myself that clean mouth feeling and tricking my brain into thinking meal time is over.
Here's my issue; I work in a kitchen, we are allowed to eat whatever we want, whenever we want. Desserts are easily accessible, and I tend to work late at night. My body doesnt naturally want to be up as late as I am when I work so it seems like I'm making up for it by giving myself mini sugar rushes.
Any tips for getting rid of these cravings?

    If you can choose a piece of fruit that cut up, or maybe brush teeth and have a cup of your favourite herbal tea?
