Low Fat Cheesecake Bites
1 cup 1% light cottage cheese
3 tbsp Splenda baking sweetener
1 tbsp lemon juice
1 tsp lemon zest
1/2 tsp vanilla
6 graham wafers, broken into 4 pieces each
whole small berries, or sliced strawberries for garnish (blueberries, blackberries, raspberries)
Directions
1. Add all the ingrediants, except for graham wafers or berries into a food processor.
2. Puree on high for approx. 30 seconds. Scrape down the sides and process on high for another 30 to 1 minute, or until mixture is smooth.
3. Chill in the refridgerator for 2 hrs or more to firm up the mixture.
4. top each of the wafer pieces with 2 tsp. of the cheese mixture and a small berry or strawberry slice.
Makes 24 - 6 per serving

Calories per serving 132.8 plus a few more for each berry, or strawberry slice
