Chicken salsa is quick and easy! Two frozen chicken breasts (I'm sure you can do more, mine are 2 big ones), 3/4 cup water, 1 cup salsa, 7 minutes with natural pressure release. I found mine needed more salsa afterward. You can take a hand mixer and shred but I keep mine whole. Costco has an organic salsa with 1 sugar. The only other lowish carb thing I make is yogurt. I did skinnytaste's 3 bean turkey chili and added a ton of veg and sweet potatoes, not sure if you'd eat sweet potatoes or beans but I added hot spices and it was great.3
