Gluten Free/Sugar Free Pnutbutter & Choc-Chip Cookies

Found this recipe on Pinterest…sounds yummy and can be eaten for breakfast (in moderation). I haven't done the math on it yet for calories though
I will be making these today…hopefully they will be as good as they sound!
Peanut Butter & Banana Chocolate Chunk Cookies
If you want these gluten-free, ensure you use gluten-free oats.
3 large, very ripe bananas
1/2 cup peanut butter, preferably all-natural (just peanuts), or almond butter
1/4 cup canola or olive oil
1 tsp. vanilla extract
2 cups old-fashioned (large flake) or quick oats
1/3 cup shredded coconut (optional)
1 tsp. baking powder
1/4 tsp. cinnamon
1/4 tsp. salt
1/2 – 1 cup chopped dark chocolate or chocolate chips
Preheat oven to 350˚F.
In a large bowl mash the bananas with the peanut butter, oil and vanilla. In another bowl stir together the oats, coconut, baking powder, cinnamon and salt. Add the dry ingredients to the wet ingredients along with the chocolate and stir until combined.
Drop spoonfuls of dough onto a parchment or Silpat lined baking sheet, or one that is sprayed with nonstick spray, and bake for 12-14 minutes, until just set. Makes about 2 1/2 dozen cookies.

In moderation is key...! :-) And this recipe is NOT sugar free... :-) Unless you use sugar free chocolate and sugar free peanut butter, the sugar levels (in my opinion) are high... I ran a calorie analysis on this recipe and the results were not all that impressive. If you produce 20 cookies in a batch there is 118 calories and 1.9 grams of sugar per cookie. Overall the cookies received a rating of D+.

IF you have a medical reason for eating this way, then try them
BUT my goodness, if you don't, JUST EAT A REGULAR COOKIE

I wonder if you could replace the oil with applesauce, lower calories, less fat. Omit the coconut, or sprinkle a bit n top so it looks pretty, maybe 2 tablespoons total, same with the chocolate chips, maybe get mini chocolate chips and divide 2 tablespoons worth divided on the top of the cookies.
It would cut the fat and sugar a bit. Personally I would forego the coconut as I am not a fan, but if you like it and use unweetened, it would probably be good!!!

Sounds great.
Just remember that most oats can be contaminated so if you are gluten free for medical reasons make sure that you buy from a brand that confirm they are gluten free.0
