Does anyone have a problem loosing 3 lbs one night. And gaining 2 to 3 lbs by that night even when you stay within your calorie goal?

If you mean you weigh about 3 pounds more in the evening than you do first thing in the morning, yes, most people do.
In the morning you are pretty much weighing only you. Maybe pajamas. At night, you are weighing you plus whatever you have eaten and drank but hasn’t gone through yet, and maybe some clothes. Possibly even holding some water from stress of the day that tonight’s sleep will release.
Normal weight fluctuations.
Suggestion- weigh once a day when you first wake up, after you pee, before you eat or drink. Enter it in a weight trending app like happy scale or weightgrapher to see the bigger picture.0
