Having a hard time with weight loss

So when I started my weight loss journey at the beginning of this year, I weighed in at 235lbs. By May, I was down to 195lbs (goal is 175lbs, my BMI optimal range is between 145-170) with only 20 more to go, I was pumped. But I recently switched jobs. I was a welder for a steel construction company and during that time I worked 7-5pm 6 days a week. I was also intermittent fasting 16/8. Well I took a field management role for Dish Network which required me to drive a lot, because I had to do inspections, help out technicians, etc. My day starts at 6am and doesn't end until the last job is done and all the techs are home. Sometimes that's at 10-11pm. I still do IF and even changed it to 18/6 instead of 16/8, but now my weight is back up to 220lbs. I want to figure this thing out before I balloon back up again. I thought maybe the lack of rest and extra stress could be the reason, so o started meditation and stress relieving exercises. I pack my own lunch too, I only eat out if my eating window is closing and I'm not going to be home for dinner, but I make sure it's a healthy option.

Are you logging your food? If you eat too many calories you will gain weight, regardless of when or what you eat.6

If you eat in a surplus it doesn't matter if that happens within a restricted time window or not - you are still going to gain.
Eating healthily is great, but if you eat in a calorie surplus you will still get fat (I did!).
Did you adjust down your activity setting when you changed jobs?5
