Please advise. A "portion" of maize meal comes up as 100g. Is this cooked or dry? Because dry it makes a heck of a lot of porridge, but cooked it's not so much but the calories is over 300.

You don't have to stick to those portions. 100 grams is just the standard for labels in some countries (usually for dry), it's not the recommended portion. You weigh out as much as you want to eat and log it.

I'm assuming this is similar to grits/cornmeal? If so, 100 g dry would be about 350 cal, so that seems to line up.

Usually the calorie information on the packaging for grains sold dry will be for the dry weight unless it states otherwise.

And, yeah, some countries just use 100 g to make comparisons easy (and it makes it easy to log -- 65 g = .65 portion). In the US, the serving size for a comparable product (if I am understanding what it is) would be 1/4 cup. In one example I'm looking at, that's 41 g dry, but like oats it's going to vary based on how much fits in a cup, which is yet another reason not to feel like the package tells you the right amount to eat.
