I am needing some insight on affordable yet healthy meals to put together for my family. We found out today that my oldest daughter is pre-diabetic and I want to make sure to go in the right direction to help my family make the life style changes that need to be changed.

Did your doctor give you any guidelines as to how many grams of carbs she should be eating? Is your daughter considered pediatric? It would help to set up a visit with a Registered Dietician with pediatric expertise if she is, any good RD if she isn't.
Quick and easy ways to reduce carbs without actually counting them: cut out sugary sodas and fruit juices. Eat more popcorn and less chips as snacks. Raise the protein and lower the starches in meals. Make stews with more protein, more veggies, and minimal rice, noodles etc. Use small tortilla and make wraps instead of sandwiches with 2 slices of bread.
More effective in children is to get them more active. Plan family walks. Encourage her to join school or community activity programs. Find out if there is an activity like biking or swimming she enjoys and encourage her to do it.
Prediabetic typically doesn't mean wholesale changes so everything you do for her will only help the rest of the family maintain good general nutrition.3
