Curry Recipe

I have been craving a curry, which is something I only eat once in a blue moon. I am looking for an easy curry recipe with ingredients that I can find at the regular grocery store. Coconut flavor is a must. Anyone have a recipe to share? Thank you in advance.

I don't like curry dishes because I find the Indian spices too strong for my taste (no offense to anybody), but I found this link on line, so maybe it can help you. Did you search for curry dishes in the Recipe section, or Pinterest?

I use boneless chicken breast, about 2 lbs, 1 jar Pataks Mild Curry Concentrate, 1 sweet onion, and 1-2 cans coconut milk. Makes a TON of food, very simple simmered together.1

If you can get the Thai curry pastes I like Tomek's recipe. My variant is ready made Thai green curry paste made in the same way with browned chicken drumsticks and cubed browned aubergines with a handful of frozen peas tossed in at the end.
If you can't buy the curry pastes my mom's Chinese chicken curry only requires curry powder.
Brown chicken thighs and or drumsticks and set aside. Brown a chopped onion and some minced garlic. Stir in a few teaspoons of commercial curry powder and fry with the onion and garlic until fragrant. Add coconut milk and return chicken back to pan with some diced carrots and a peeled finely grated potato (the potato will disintegrate and thicken the sauce). If there is not enough liquid to just cover all the dry ingredients add water or stock. Simmer about 25 minutes until chicken is cooked through.1
