Lemon Chicken Recipes

My teenager loves lemon chicken and in particular, a really unhealthy and yummy one my husband made before we stared MFP. Anyone have a yummy recipe that is still good that she will like?

    I normally just mix lemon juice with a small amount of Olive Oil and a little honey mix that up with some black pepper and drizzle over 4-6 chicken breast/legs. I pop the remainder of the lemon in the roasting tin. I cover with foil, cook it on low (about 150c) in the oven for about half an hour and then turn it up to high (180-200c) for a further 10-15 mins to crisp up.

    I love the chicken picatta from "The Joy of Cooking."

    It calls for "lemon and herb seasoning" - what all do people use for that?

    Just pan grill your preferred chicken part(s) w/or w/o the skin as you prefer in a skillet w/your preferred spices (I use salt, pepper & thyme) using as little or much oil as you like and finish w/as much or little lemon juice as you prefer.

    For extra zing, make gremolata of grated lemon zest and chopped parsley w/just a touch of the fat/oil of your choice (I prefer a premium extra virgin olive oil 4 this purpose) to top the chicken w/b4 serving.

    If you're worried about the cals, omit the fat/oil from the skillet and/or the gremolata.

    This is about as simple as it gets
