This reminds me of an avocado sandwich I loved at a restaurant where I used to live: avocado, tomato, cheddar, sunflower seeds, on multigrain bread.

This reminds me of a sandwich I used to get at a food co-op about 40 years ago. The bread certainly had more calories (it was a fairly thick cut, whole grain bread, made in-house), and I didn't do onions. I generally had shredded carrots on it too (so good!). Some days I would have havarti instead of hummus.

I’ve been making a sandwich like that for years minus the spinach but now maybe I’ll try it with spinach. Thanks for the post!
