Made this up on my own when I needed cheap easy meal to whip up for dinner.
•3 small cans (15oz I think- too lazy to get up and look) diced tomatoes , don’t drain
•2 cans kidney beans, drained and rinsed
•1 can black beans, drained and rinsed
(You can play around with the type of bean and how many ... Pinto beans are good too) .
•2 packets Low sodium chili
•1-2 onions chopped and sautéed in olive oil
•Garlic (I used the pre-chopped in the jar because I like to cut corners. Fresh garlic is obv yummier)
•A few squares of dark chocolate (high %cacao)- trust me💁🏼♀️
•2 frozen vegan burgers (aldis brand). Or put in a cup of cooked quinoa if you don’t veggie burgers on hand .
**Dump into the crockpot on low for 4- 6 hours. Nothing is raw so you can eat sooner than 4 hours. You are probably ok throwing it in a large pot on the stovetop and cooking it there instead ... if you don’t have a crockpot.
Makes A LOT... make sure you have containers to freeze leftovers and save for a rainy day 👍🏼
