Do I need more rest days ?

Hello everybody, I've just started training 6 days a week every week since the new year and my progress has been amazing so far.

Started out using this app to lose weight about 6 years ago and I reached my goal weight of 200lbs and I feel great. Can't really get much lower than that seeing as I'm 6,2 and have a husky build. I basically looked like I lift before I even started lifting but I decided it's time to add some mass to my frame

I've been making good progress since I've started lifting since the new year, moving up 15 to 20lbs on all my lift since I started working out except my chest where I've made a 45lbs gain on that lift in just about 3 months. But now my growth has slowed to a crawl and people tell me I should put in a extra rest day because I'm not giving my muscles enough recovery.

My current routine is (Bench Press 5 sets of 8) (Shrugs 5 sets of 15) (Shoulders Press 5 sets of 8) ( lateral raise 3 sets of 15) Next Routine for the next day would be ( Bench Press 5 sets of 8) ( Bar Curl 8 sets of 8) (Dumbbell Row 8 sets of 8) ( Dumbbell Tricep Extensions 5 sets of 8)

I alternate between those routine everyday day 6 days a week. No it isn't a mistake that I have chest up there twice. I train chest 6 days a week mainly because the bench press is my favorite exercise. Before you lose your minds that I'm not training legs and maybe I need to add more exercise to my workouts I'm a long road trucker. I'm in my truck 4 weeks at a time. I'm lucky I have enough space for my equipment and a collapsable bench and everyday I'm training in whatever Element I'm in. Today I trained in the thunderstorm in Wisconsin, Strapped on a rain coat and did my workout because no God damn excuses. That's the mentality that let me lose 80lbs to get to 200 and that's the same mentality I use for this.

As far as legs I don't like or car about training legs what so ever. It's take a large amount of determination for me to get out my truck and train in the snow because it's not a rest day and if I have to train a muscle I don't care about it will be very diffcult for me to find the motivation so I skip it and no I'm not adding it.

The protein calculator for me tells me to eat 215g of protein to promote muscle growth and I will admit that I've only been eating about 180g of protein a day just because it's hard to find good food on the road most of my protein does Currently come from protein shakes. About 80g of it but could being under my protein goal slow my gains down this much ?

Any ideas would be helpful.
