MFP indicates I need to be drinking 65 oz of water per day. Do coffee, milk and juices count twards the total?

All fluids count towards hydration as they are made with water, but not everyone requires the amount of water suggested, some need more, if they are extremely active, others find they dont need as much...

If your urine is a light colored yellow but not too dark that is a good sign you are hydrating properly

Yes. All liquids (except for alcohol) count. The water in the foods you eat also hydrates you.

Honestly, unless you have specific reason to think you need to focus on this (or you have guidance from a doctor to do otherwise), drinking to thirst should be sufficient.

For clarity: It's literally the alcohol part of alcoholic drinks that doesn't count. The non-alcohol fluids in things like beer/wine, or fluid non-alcoholic mixers in mixed drinks: Those count.

Not that I'm encouraging excess consumption. ;)
