Need input - Nutritious Dehydrated Foods

I'm planning to make some dehydrated snacks. Some things on my list are ginger, apples, and mango. Protein, fiber, and fairly low sugar are my targets. Is this unrealistic? What are some things to consider? Any suggestions?

You can keep it relatively lower calorie by not add sugar. Example, use cinnamon with your apple, pumpkin pie spice works well too.4

Not much protein on that list. Maybe consider crispy chickpeas? (More of a slow-roasted thing, vs. made in a dehydrator, but easy to make at home.) High in fiber, good protein.
When I make squash or pumpkin, I always roast the seeds with a little olive oil, popcorn salt, and good chile powder. Also not dehydrated, and there's only so much in one squash or pumpkin!2 -
Jerky (turkey, beef, pork, salmon) is easy to make for protein. You can control the sugar/sodium content in the marinade. Really subtle if you sub a little fruit juice for some of the liquid in the marinade.2

dehydrated cinnamon apples was my favorite at one time. they won’t help you meet your “fairly low sugar are my targets” though. dehydrated fruits are often even higher in sugar for us for we tend to over eat them since a serving is such a small amount. like the apples i used (ambrosia) were more juicy and shrunk down by a lot, a 5lbs bag dehydrated down 14-16oz worth.. so yeah they were way easy to overeat.2
